Ultimate Summer Bowl

It was in the ‘90s in DC yesterday and in honor of the transition to warmer weather (finally!), I’ve developed not just a summer bowl, but the ULTIMATE summer bowl.

I wasn’t planning on calling it that, but this seriously turned out AMAZING. The cucumber, corn, cherry tomatoes, and mango are refreshing on a hot summer day.

The lemon vinaigrette took about 30 seconds to make and the total time was only 25 minutes. I’m a big fan of any recipe that is essentially throwing a bunch of vegetables in a bowl.

The hardest part about this was probably slicing the mango. But thankfully I had Martha Stewart to help me out with that one. You can listen to Martha’s soothing voice tell you how to cut a mango here.

Serves 3 – 5 people

Prep Time: 15 minutes / Cook time: 10 minutes / Total time: 25 minutes

Summer Cucumber Salad with Steak | Easy summer recipes | Paleo | Gluten Free | Dairy Free

 

Ingredients:

Salad:

  • 2 Cucumbers, chopped in quarters
  • One 15 oz can sweet corn, bpa free
  • 1 cup cherry tomatoes, cut in half
  • ¼ large Red onion, finely chopped
  • 1 mango, chopped
  • ⅔ cup Kalamata olives, drained if in a jar or can

Steak

  • 1 lb steak
  • ½ tsp lawry’s (or salt)
  • ½ tsp pepper
  • ¼ cup balsamic vinegar
  • 1 tsp Dijon mustard
  • ½ tsp garlic powder

Lemon Vinaigrette Dressing:

  • ⅓ cup olive oil
  • Juice from 1 medium lemon
  • 2 tsp maple syrup
  • 1 tsp dijon mustard

Instructions:

  1. Chop the cucumbers, onion, cherry tomatoes and mango and put into a large mixing bowl
  2. Add the corn and and olives
  3. Mix with a spatula until all vegetables and fruit are evenly mixed
  4. In a medium mixing bowl, add balsamic vinegar, lawry’s, garlic powder, pepper, dijon mustard, whisk together
  5. Add the steak to the bowl and thoroughly cover
  6. Turn the skillet on high heat and let it heat up before adding the steak
  7. Add a tsp of cooking oil and cook the steak for 5-10 minutes, flipping every minute or so, until brown on the outside, set aside
  8. While the steak is cooking, add the olive oil, maple syrup, and lemon juice to a mixing bowl, whisk
  9. Add the salad dressing to the cucumber mixture, gently mix with a spatula
  10. Serve with steak on top
