After a fair amount of experimentation, this is my favorite paleo and gluten free flour recipe. A lot of gluten free flours that you buy at the store may be made with rice flour, starches, bean flour, potato flour, etc. There isn’t a problem with this unless these types of foods disagree with you.
The paleo diet recommends eliminating rice, beans, and white potatoes from your diet. While this leaves you with with some great flour options, baked goods will taste funky if you make them with just almond, just tapioca, or just coconut flour. AKA people who aren’t gluten free will think your muffins taste like shit…and if they’re anything like my friends, they’ll tell you this.
By blending almond, tapioca, coconut, and arrowroot powder–you get the perfect blend of paleo flours and your friends can shut up because your baked goods taste damn good.

**makes 6 cups of flour
- 2 cups almond flour
- 2 cups tapioca flour
- 1 ½ cup coconut flour
- ½ cup arrowroot powder
- Throw the dry ingredients in a mixing bowl and combine with a spatula
- Store in a cool, dry place
