Cacao & Almond Butter No-Bake Bars

Gluten Free no-bake cacao almond oat bars | Paleo | Dairy Free | meal prep | energy bars

 

Ingredients:

  • 1 cup figs
  • ⅔ cup almonds, messily chopped
  • ⅓ cup walnuts
  • ¼ cup coconut milk
  • ⅓  cup almond butter
  • ⅓  cup maple syrup
  • 1 ½ cup gluten free oats
  • 1 tbsp cacao powder

Instructions:

  1. Put the fig and coconut milk in a food processor and process until it becomes a dough like consistency
  2. Place the almond butter and maple syrup in a small pan and melt down on low heat (about 3 minutes)
  3. Add the cacao powder to the almond butter and maple syrup mixture, stir until mixed, and cook for an additional minute
  4. Messily chop up the almonds and walnuts and place them in a large mixing bowl
  5. Add the oats to the large mixing bowl and stir together with a spatula until all the nuts and oats are mixed
  6. Add the processed fig and coconut mixture to the nuts and oats, stir to combine
  7. Add the almond butter, maple syrup, and cacao mixture to the large mixing bowl and stir to combine, you may need to use your hands to coat all of the nuts/oats
  8. Line a 9×13 pan in wax paper
  9. Press the bar mixture flat into the pan and pack it down flat with hands
  10. Leave in the freezer for 20 minutes
